I am looking to eventually upgrade from the factory radio (Uconnect 3 with 5 inch display) to an aftermarket radio. The factory radio software allows you to change settings like: headlight sensitivity, enable parking brake when put in park, release parking brake for service, etc. Would removing the radio have any adverse effects on these settings? Or would they just no longer be available?

I think you're stuck with it. They way they build them into the car and use it to control so much else makes it like swapping out brains. I have a 2017 old body style compass that I put in an aftermarket pioneer with carplay and Best Buy didn't want to sell me one because their system said the 2017 compass can't accept AM radios. However when I showed them I had a 2017 old body style, it all worked out.

uconnect is the worst system out there by far, I'm sorry it'll be difficult at best for your situation.
